Quick Mini Lasagna By Katie Bell


1 pound ricotta cheese

1/2 cup mozzarella cheese

1/4 cup Parmesan cheese

6 lasagna noodles

1/2 pound ground beef

Red Sauce - I use a portion of the Red Sauce I have a recipe for in my notes, or any jar of red sauce you have on hand would be fine if you are short on time.

In bowl mix the three cheeses together

Combine ground beef and red sauce in a separate bowl

Boil Noodles, Drain

SQUARE GLASS PAN

Spread thin layer of Red Sauce/meat mixture

Layer three noodles, cut to fit pan

Spread layer of cheese mixture on top

Layer with more Red Sauce

Repeat for one more layer, and then sprinkle grated mozzarella on top.

Bake 350 for 30 minutes covered with foil. Uncover and cook another 10 or till cheese is melted

I will make this ahead of time, cover it and put it in the fridge till needed, But if you make it all at once and everything is hot you may not have to cook it as long.
