Veggies with Wild Rice By Jannette Basham


1 bag Trader Joe's Basmati Rice Medley

4 cups water

1 TBSP Olive Oil or Butter

3-4 eggs beaten

1/4 cup freeze dried carrots (or 1/2 cup chopped fresh)

1/4 cup freeze dried peppers (or 1/2 cup chopped red/green bell peppers chopped)

1/4 cup freeze dried peas (or1/2 cup fresh/frozen)

1/4 cup freeze dried celery (or 1/2 cup fresh chopped)

2 tsp. chicken bouillon or your substitute

Opt: Add shredded or chopped chicken! Yum!

Boil water. Add all ingredients. Eggs; stir while pouring into boiling water. Mix well. Reduce heat and cover. Simmer for 15 min! DONE!

I have all these veggies as my food storage freeze dried so it's easy to just add it to anything I make if I don't have any fresh. Fresh works well too if you have it!

This recipe makes enough for 8 people as a MAIN DISH! The bag of rice only costs a couple of dollars!
