Healthy Marinara Sauce By Emily Drolshagen
1 lb spicy Italian pork sausage no casings (optional)
1 lb sweet Italian pork sausage no casings (optional)
Couple T of olive oil
3 lg zucchini
3 lg yellow squash
Spices to taste (I like Italian seasoning, garlic salt, oregano and basil all dried)
1 lg white onion
2 lg can diced tomatoes
1 lg can tomato sauce
1 small can tomato paste
Brown meat in large (I use non-stick) pot. When cooked, remove from pan and drain. Reserve.
Slice all the vegetables into quarters then slices. Doesn’t have to be exact. Add olive oil to pan on med heat. Add sliced vegetables and spices. Cook until softened stirring occasionally.
When veggies are done add 1 can of diced tomatoes and 1 can of sauce. Use a stick blender or a regular blender in batches to blend the mixture until desired texture. Then add the remaining can of diced tomatoes for a nice texture and add tomato paste. Return the meat to the pot and heat through.
SERVE [:D] my favorite part!
It's really good if you stir in fresh basil leaves towards the end. You can also add mushrooms or frozen spinach if you want.
