Almond Joy Balls By Katie Bell


16 oz (454g) dried, flaked coconut
1 can (14 oz, or 396g) of sweetened condensed milk
1/2 lb (227g) powdered sugar
Almonds (about 1 cup, or desired quantity)
High quality dark or milk chocolate, depending on your own preference.
Mix dried coconut and powdered sugar, and chopped almonds together, & then mix the sweetened condensed milk with it.
Form into balls. If the mixture doesn't hold well enough initially, put in fridge for a little while until it holds when you form it.
Chill for at least an hour or until good & hard.
Melt chocolate over a bain marie. Dip the coconut-almond bar in the chocolate & remove with your fingers or a fork on to parchment paper to let set.
TIPS: I ended up mixing with my hands, it was just easier. And I bought slivered almonds so chopping was easier. I made half this recipe and ended up with over 40 balls.
