- 6-8 hard boiled eggs
- 1/2 cup organic mayonnaise
- 1/4 tsp curry, sea salt and pepper
- 1/2 chopped red onion
- 4 cherry tomatoes halved (or garden tomatoes :D)
- sliced cucumber
Instructions:
1. Mash up your eggs with the mayonnaise
2. Add the curry, salt and pepper and mix.
3. Stir in the onions
4. Enjoy your egg salad on a bed of lettuce with tomatoes and cucumber
